On pancake Tuesday I had the pleasure of spending the morning baking with our star cook Anne. When I arrived she was already up bright and early preparing our fruit scones by hand. Anne makes all our cakes, scones, soups and pancakes by hand and from scratch.
Where possible she uses ingredients produced on our land like herbs for our soups and eggs from our hens. In future we hope to produce much more of our ingredients on our land including fruits and veggies.
Anyone that has had the pleasure to meet Anne will know that she is quick with a smile and a joke and her baking is legendary. Anne's signature cakes include Victoria sponge, lemon drizzle, orange drizzle, chocolate biscuit and carrot cake. Many of our customers have told us that they make the journey up to The Hazel House especially for her carrot cake having developed a serious addiction to it at first bite!
Anne has been baking since she was a teenager when she learned how to make cakes, scones and breads at her mother's side. She doesn’t measure anything because she knows it all by eye. She is a true pro. Anyone who has asked for her recipes in the café will know she doesn't give anything away not even to us! Her scone recipe was passed down from her mother it's a top family secret. We are so lucky to have her with us. We love you Anne! xxx
