Etsy Party at The Hazel House!

Last week we had the pleasure of hosting a big party for our friends from Etsy Dublin. Thirty-three brave souls clambered off the bus and into our workshop on a cold April morning. First off, we had a woodwork party with Niall where they made hazel walking sticks. They learned how to cut the wood, whittle it, wax it and bind the leather to it for the handles. These came in very handy on our mountain walk later one!

Then, they got their creative juices flowing making greeting cards with Fionnuala. They got stuck into all the buttons, feathers, coloured paper, punches and came away with some beautiful cards for friends and family.

After that, we (well most of us!) braved the cold and climbed to the top of Tibradden mountain. Afterwards, we all had some well deserved hot drinks, cake and scones by the fire. It was so nice meeting you all, hope to see you all again soon! The Hazel House Pizzeria

We are always trying fun, new things up in The Hazel House. We are open to any and all ideas and we usually have one mad project or other on the go at any one time! A few months ago Niall had an idea to start making a traditional clay pizza oven from scratch. He did loads of research online and visited a few people who had made their own pizza ovens. He decided on a traditional clay oven because they reach really high temperatures, it makes amazing crispy, melt in your mouth pizza.

He made the whole thing from scratch and by hand himself. He got a local person to cut the steel base for the pizza oven and started there. Next came the wooden frame, then the steel cage, then the clay. Layering on the clay was a loing slow process done all by hand. Once the clay is dry, the wood is burned away and you are left with a traditional clay pizza oven.

We wanted to make it transportable so we bought an old sheep trailer and decided to refurbish it. Niall and Colm painted and varnished it and added a work table and signage.

Niall researched different pizza dough and sauce recipes and decided on one after many tastings and deliberations! We got together last week to cook the very first Hazel House pizzeria pizza. Got the fire going and that pizza was bubbling in less than a minute. And take my word for it, it is delicious. Proper Italian pizza. Crispy, thin base, garlicky tomatoey sauce, melt in your mouth toppings. DELISH!

Our plan is to open The Hazel House Pizza & Wine Bar on regular nights throughout the year at The Hazel House. The first one will be on Friday the 6th of May. It will also be available for group bookings, birthday parties, hen parties etc. at The Hazel House and elsewhere. We are also planning make-your-own-pizza-from-scratch parties! Watch this space! To try this pizza for yourself, join us on Saturday the 9th of April when we celebrate our second birthday at The Hazel House from 6.30pm! We will be giving away loads of pizza FOR FREE! There will be live music on the night as well as wine and beer available. Hope to see you all then!

Operation Hen Rescue 2016!

On Sunday, we rescued twenty-one hens from the slaughterhouse with the help of Susan from Littlehill Animal Rescue Kildare. Myself, Niall & Ciarán headed off to Lidl carpark in Grange Road, Rathfarnham armed with cardboard boxes, Sudocream and blue antiseptic spray (for their poor bare skin) to meet our new feathered friends.

We managed to get twenty-one scared and flappy hens into two cars with three people and a dog! It was a bit of a funny ride back to The Hazel House but we got there somehow! One of our girls even laid an egg in the car on the way home! What a hero!

Susan from Littlehill is currently working night and day driving around the country to find new homes for these girls. These lucky ones will now live out the rest of their days in The Hazel House with the rest of our flock including chickens, ducks and one lucky rooster! Thanks so much to Susan for saving thousands of these girls from a dreadful fate. If you are interested in rehoming hens yourself please check out Littlehill Animal Rescue Facebook page. They are so easy to take care of once you hava a secure coop or shed and they will reward you with fresh eggs and entertain you with their funny antics!

Baking with Anne!

On pancake Tuesday I had the pleasure of spending the morning baking with our star cook Anne. When I arrived she was already up bright and early preparing our fruit scones by hand. Anne makes all our cakes, scones, soups and pancakes by hand and from scratch.

Where possible she uses ingredients produced on our land like herbs for our soups and eggs from our hens. In future we hope to produce much more of our ingredients on our land including fruits and veggies.

Anyone that has had the pleasure to meet Anne will know that she is quick with a smile and a joke and her baking is legendary. Anne's signature cakes include Victoria sponge, lemon drizzle, orange drizzle, chocolate biscuit and carrot cake. Many of our customers have told us that they make the journey up to The Hazel House especially for her carrot cake having developed a serious addiction to it at first bite!

Anne has been baking since she was a teenager when she learned how to make cakes, scones and breads at her mother's side. She doesn’t measure anything because she knows it all by eye. She is a true pro. Anyone who has asked for her recipes in the café will know she doesn't give anything away not even to us! Her scone recipe was passed down from her mother it's a top family secret. We are so lucky to have her with us. We love you Anne! xxx
